Vegetarian Chickpea Arrabiata

VEGETARIAN CHICKPEA ARRABIATA

Our Organic Canned Italian Chopped Tomatoes are made with 100% imported organic Southern Italian tomatoes. They're preservative-free, simply crafted organic tomatoes imported from Italy! Chef Neil Fusco's goal is to bring the true taste of Italy into your home with only the healthiest ingredients.

INGREDIENTS

  • Two (2) 14 oz. cans of Organico Bello Imported Southern Italian Chopped Tomatoes
  • Two (2) 14.5 oz. cans chickpeas, drained and rinsed
  • 1 small white onion, roughly chopped
  • 1½ cups chopped kale, stems removed
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: Grated parmesan, chopped parsley and crusty bread for serving

INSTRUCTIONS

  1. Heat the olive oil in a large sauté pan over medium high heat. Sauté the onions until they soften, about 5-7 minutes. Add garlic and cook for another minute until fragrant. Stir in the tomatoes, red pepper flakes, salt and pepper.
  2. Bring to a boil. Reduce heat to simmer until thickened, about 15 minutes. Stir in the chickpeas and kale. Continue simmering for 5 minutes until the kale has wilted and the chickpeas are heated through.
  3. Optional: Serve with grated parmesan, parsley and bread.
