Breakfast Tacos

Serves 4


  • 1 cup Organico Bello Salsa 
  • 8 slices bacon
  • 8 corn or flour tortillas
  • 1 small red onion, sliced in thin rings
  • 1 jalapeño pepper, diced
  • 1 small bunch of cilantro
  • 6 large eggs
  • 1/4 cup 2% milk
  • Salt and pepper to taste


In a large skillet cook bacon on medium heat until browned and crispy. Let bacon drain on a paper towel covered plate. While bacon is cooking, whisk together milk, eggs, salt and pepper. Cook eggs over medium heat, stirring occasionally, until fluffy but still slightly wet. Warm tortillas in the microwave for 30-45 seconds. (Place a damp paper towel over tortillas before microwaving.)

Place one slice of bacon and a couple large spoonfuls of eggs in each tortilla. Top with Organico Bello Salsajalapeño, cilantro, and onions. Serve warm.
