La Vita Organica - Pumpkin Craze


Halloween is just around the corner! Everyone loves pumpkins from Pumpkin Spice Latte’s to Pumpkin Pancakes to Jack-o-lanterns, but it’s time to really dive into cooking with Pumpkin!

There are various health reasons to eat more pumpkin – rich in fiber, Vitamin A, and potassium – so don’t be ashamed of your Pumpkin Craze! And although pumpkin pies and spiced latte’s may not be the best way to gain these health benefits since they have a high level of sugars, you can easily add pumpkin to your diet with a few easy recipes!

Cooked and pureed pumpkin (see recipe below) can easily be added to various meals  or snacks for an easy addition to your diet –

  • Oatmeal
  • Yogurt
  • Mac n’ Cheese
  • Soup

Save those Pumpkin Seeds from your Jack-o-lanterns or baking pumpkins and toast them to add to –

Pumpkin Seeds

  • Granola
  • Salads
  • Trail Mix

Chopped and Roasted or sautéed Pumpkin makes a great meal or hor d’oeuvres such as –

  • Salads
  • Mixed with goatcheese to make an Autumn Bruschetta

 Cooked and Pureed Pumpkin Recipe


  • 1 baking pumpkin


  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Cut the pumpkin in half, stem to base. Remove seeds and pulp. Cover each half with foil.
  3. Bake in the preheated oven, foil side up, 1 hour, or until tender.
  4. Scrape pumpkin meat from shell halves and puree in a blender. Strain to remove any remaining stringy pieces.

 You can use this right away or store in freezer bags for up to 6-8 months!
