Chicken Meatballs with Spaghetti

CHICKEN MEATBALLS WITH SPAGHETTI

Prep Time: 15 minutes 
Cook Time: 30 minutes 
Total Time: 45 minutes 
Servings: 6

INGREDIENTS

  • 1 jar of Organico Bello Kale Tomato Basil sauce
  • 8 ounces whole wheat spaghetti pasta
  • For the meatballs:
    1 lb ground chicken
    1 large egg
    ½ cup panko crumbs
    ½ cup grated Parmesan cheese
    ½ cup grated Mozzarella cheese
    1 large clove garlic, minced
    ½ teaspoon dried oregano
    ½ teaspoon dried basil
    ¼ teaspoon salt
    ⅛ teaspoon pepper

INSTRUCTIONS

  1. Pre-heat oven to 450°F.
  2. Bring a large pot of salted water to boil. Once boiling, add the pasta and cook until al dente. Drain.
  3. Meanwhile, place all meatball ingredients in a large bowl. Use a fork, or your hands, to mix until well combined. Form into 1-inch round balls and place on a parchment-lined rimmed baking sheet. (Tip: Use a small cookie scoop to make it quick and easy to form meatballs)
  4. Bake for 14-15 minutes, or until cooked through. The internal temperature should read at least 165°F on an instant-read thermometer.
  5. Once the meatballs are done cooking, in a large skillet, warm up desired amount of Organico Bello Kale Tomato Basil sauce, then add meatballs to sauce.
  6. Serve the meatballs and sauce over the pasta.
  7. Optional: Garnish with Parmesan cheese.
